INGREDIENTS:
- 1.5 kgs. chicken
- 2 cloves garlic
- 2 tsps. salt
- 1 tsp. pepper
- 1 cup flour
- 2 cups oil for frying
- Sweet and Sour Sauce (see recipe below)
METHOD / DIRECTIONS:
1. Clean the chicken and
cut in bite-size pieces.
2. Mince garlic.
3. Season with salt, pepper
and garlic.
4. Coat chicken pieces in
flour and deep fry until cooked.
5. Add pineapple chunks/
pieces, pour sauce over chicken and serve.
Sweet & Sour Sauce
INGREDIENTS
- ½ cup GRACE PINEAPPLE SLICES
- 4 slices ginger root
- ¼ cup carrot
- 1½ cups water
- 2/3 cup GRACE WHITE CANE VINEGAR
- 1½ cups sugar
- ½ cup TOMATO KETCHUP
- 2 Tbsps. cornstarch
METHOD / DIRECTIONS:
1. Cut in small pieces
pineapple slices. Slice gingerroot and carrot.
2. In a sauce pan, combine
water, vinegar, sugar and tomato ketchup.
3. Add ginger and carrot
slices and bring to a boil. Cook slowly for five minutes.
4. Dissolve cornstarch in a
small amount of water and add to the sauce. Stir until thicken.
5. Add pineapple pieces to
sauce. Pour sauce over chicken and serve.
