Jamaican Red Pea Soup Recipe

Ingredients:
o    16 cup(s) water
o    3 cup(s) red peas, soaked
o    1  lb Stewing beef
o    1 1/2 lb Pig’s tail or ham hock (optional)
o    3 clove(s) garlic, crushed
o    4 whole pimento berries
o    1 pound(s) yellow yam, peeled and sliced
o    1 pound(s) cocoa, peeled and sliced
o    1 pound(s) sweet potato, sliced
o    1 small breadfruit, sliced (optional)
o    1 packet(s) Coconut Milk Powder
o     spinners
o    2 tablespoon(s) celery
o    2 stalk(s) escallion, crushed
o    1 sprig(s) thyme
o    1 whole scotch bonnet pepper
o    1 packet(s) Cock Soup Mix

Directions 
1.     If using, place pig tails in bowl, cover with water and soak overnight in fridge to remove excess salt
2.     Put water to boil in a large pot.  Add red peas, beef or pig tails, garlic and pimento berries and boil for about 40 minutes or until the peas becomes tender.
3.     Add the yellow yam, cocoa, sweet potato and breadfruit, if it is used.
4.     Mix in the Grace Coconut Milk Powder, then shape and add the spinners.
5.     Fold in the celery, crushed escallion, thyme, whole scotch bonnet pepper and the  Cock Soup Mix.  Allow to simmer for about 15-20 minutes.
