Jamaican Banana Bread Recipe

Ingredients
2 cups all-purpose flour
 2 tsp baking power
¼ tsp salt
1 tsp ground nutmeg
½ cup soft butter
¾ cup brown sugar
2 eggs, beaten
4-5 overripe large bananas (2+1/3 cups mashed)
1 tsp vanilla extract
1/3 cup raisins (optional)

½ cup milk or water
 
Descriptions
Preheat oven to 180°C/350°F.


1.     Cream Grace Hello Margarine and granulated sugar, add beaten eggs and vanilla.
2.     Mash ripe bananas and add to the above mixture.
3.     Sift flour, baking powder, baking soda, salt and nutmeg, adding alternately with mashed banana mixture.
4.     Fold in raisins, mixture should drop easily from a spoon.  If not, add a little water or milk until consistency is reached.
5.     Scrape mixture into a greased loaf pan and bake until golden brown, and a skewer inserted, comes out clean.
