Ingredients:
2 tablespoon(s) Vegetable Oil
1 tablespoon(s) garlic, chopped
1 1/2 tablespoon(s) curry powder
1 tablespoon(s) Jerk Seasoning
1 pound(s) shrimp, cleaned and deveined
1/4 cup(s) green escallion tops, chopped
1 cup(s) Coconut Milk
1 teaspoon(s) cornstarch
1/4 cup(s) water
1/4 cup(s) red sweet pepper, julienne
1/4 cup(s) green sweet pepper, julienne
Directions
1. Heat Vegetable Oil
in a skillet. Add chopped garlic, curry powder and Jerk
Seasoning and cook for about one minute.
2. Add the shrimp and cook stirring
constantly for about four minutes. Mix in the green escallion tops and
the Coconut Milk.
3. Combine cornstarch and water and fold
into the mixture until it thickens.
4. Fold in the red and green sweet
pepper, and the Hot Pepper Sauce, and cook for one
minute.
